- ½ tbsp. organic olive oil
- 2 organic free-range eggs
- 1 scoop of Organic Nature’s Plus® Pea Protein
- ½ tsp. organic vegetable bouillon
- 2 tsp. organic buckwheat flour
- 2 tbsp. chopped fresh cilantro
- 4-5 diced Kalamata olives
- 4-5 diced cherry tomatoes
- Heat the organic olive oil on low heat in a frying pan.
- While oil is heating, beat the organic free-range eggs with Pea Protein and vegetable bouillon.
- Add organic buckwheat flour, mixing continuously.
- Pour mixture into frying pan and cook until eggs are set and firm. Carefully flip the omelete and cook the other side.
- Place on a plate and garnish with fresh cilantro, Kalamata olives, and cherry tomatoes. Season with salt and pepper to taste. Serve immediately and enjoy!
